Entrees and Sides
This is a just a small sampling of some of the entrees and sides that we prepare. Availability of all items may not be possible depending on the season.
Entrees
Lasagna al Forno – generous portions of our lasagna with homemade meat sauce, Italian sausage, mozzarella, fresh basil, ricotta and parsley. Vegetarian also available.
Roast Turkey – the thanksgiving favorite with crispy browned skin served with our own giblet (or non-giblet) gravy
Enchilada Platter – your choice of cheese, chicken, or beef enchiladas with our own sauce and topped with cheese
Parmesan Chicken – the classic standby done upscale and to perfection
Chicken Saltimbocca – thin chicken cutlets topped with artichoke, prosciutto and capers in a light lemon cream sauce
Peach Glazed Ham – whole shank portion ham with a sweet peach and ginger glaze
Roasted Pork Loin – whole loin roasted in dijon and herbs with a creamy tarragon dijon sauce
Sauerbraten – slow cooked to perfection and served with braised red cabbage and apple
Kahlua Pork - the Hawaiian luau favorite is cooked in banana leaf, then shredded and combined with fresh pineapple for a sweet finish
Braised Short Ribs – off the hook best short ribs that there are. These things are outrageous.
Deli Sandwiches – we do quite a variety of these from your standards like tuna salad and Italian subs to our own creations such as a roast turkey with pesto and provolone, slow roasted glazed ham and apple butter, and tender juicy roast beef with horseradish crema
Sides
Garlic Mashed Potatoes - this is one that I let my wife do, she makes them like no one else!
Braised Red Cabbage – the tart cabbage and vinegar and combined with apples and cooked down – way down – to a purple perfection
Roasted Broccoli – fresh broccoli is tossed with a little olive oil, garlic, and bread crumb then roasted to just done
Roasted Sweet Potatoes – giant sweet potatoes roasted and then served with a cinnamon butter and brown sugar
Seasonal Steamed Vegetables – seasonal squashes, root vegetables, asparagus and broccoli steamed to al dente goodness
Arroz Verde – a different take on spanish rice, this is cooked with cilantro to give it a bright green color and even brighter flavor. This one is always a crowd pleaser.

Uncle Sam’s Chili – handed down from my great uncle, this chili recipe is the perfect side, main dish or desert. It’s that good!
Grilled Asparagus – tender young shoots are grilled over very high heat and finished with a little fresh pepper and sea salt
Grilled Ears of Corn – grilled and then served with our own garlic butter, lime juice and cotija cheese
Salads
Classic Caesar Salad – fresh hearts of romaine, parmesan cheese, croutons and just a bit of dressing
Spicy Cole Slaw - an interesting twist to standard cole slaw, we kick up the flavor and the spice in this one
Greek Rice Salad – a cold rice salad mixed with peppers, asparagus and corn with a light vinaigrette. This one is perfect on a hot day.
Seasonal Fruit Salad – fresh seasonal fruit mixed with a unique ginger syrup
Red Potato Salad - our homemade red potato salad, creamy with just a hint of dill
Macaroni Salad – the perfect side to our Kahlua pork, cheese burgers, or pulled pork
